Last weekend after year another meal inwich the children griped and complained about it (I don't even remember but it was something that one of them had picked and something that I was not excited about) Dh told me to make cry I make something that I really like this week even if no one else will.
So I am making ' vegtale stack ups'. Which is a meal I go up with consisting of a hamburger patty topped with mashed potatoes with a cheese sauce with peas in it on top. No one in my family really likes it, but I do. When I make it now I make cauliflower mashed potatoes where there is less than a third potatoes to cauliflower, and then have a dairy free chess sause. I'm going to try to get away with charcuterie, and buffalo chicken pieces with dip for dinner. Only one child is home tonight, and I don't feel like cooking or cleaning up dinner messes.

Breakfast burritos (scrambled eggs with sausage), steamed broccoli and fried potatoes. One side of the table ate the broccoli and potatoes, while the other side ate only the burritos. It was amusing.

I openly confess that I have been negligent lately with meal planning. I've been resorting far too often to quick and easy last minute things. And I am actually really passionate about cooking and healthy foods and my love language is TOTALLY cooking for my family! So... I have no excuse.

Yesterday was ds's 9th birthday and he chose hamburgers. My IL's gave us an extra rotisserie chicken that they bought so I am making this casserole with it. (I make it less spicy)
