My 20 yr old is smoking ribs in the backyard in the smoker he bought to learn how to make good bbq like he gets at restaurants. With his enthusiasm and youtube, here's hoping! I'll make a salad and roast some veggies.

Delicious use of leftover meatloaf! I took some hamburger buns, topped with slices of meatloaf and mozzerella cheese then baked in the oven. Kids loved them!

Cajun cream chicken in the crock pot tonight with mixed veggies on the side.
I've got to do something with the beef short ribs languishing in the fridge or they'll have to be tossed. I just don't want to deal with all the fat. Usually I cook (braise) them and refrigerate overnight so that I can skim off the fat from the sauce, reduce it and serve the next day. I just don't feel like spending two days on dinner this week . . . . . . . .

Tuesday we had Greek meatballs, yellow rice, tzakiki, and Greek salad.
Wednesday we had jalapeno turkey burgers with pico de gallo (it was supposed to be topped with guacamole, too, but the avocados weren't ripe ), oven baked fries Thursday and Friday, not sure of the order yet, it is dependent on the time I have available, will be a beef and pasta bake with tossed salad and chicken pot pie type casserole with chicken breasts, potatoes, carrots, mushrooms in a chicken sauce with green beans and spinach salad. Saturday we are planning on having chicken and potato chowder.
