Getting prepared for baby recipes and food....
STARTING OVER AFTER A CHEST FREEZER INCIDENT THAT TOOK IT OUT OF COMMISSION. SO HERE'S the SCOOP!
I've got an empty chest freezer and need to start stocking it with stuff for late pregnancy and post-partum. So, I'm making lists and starting the process. I'll keep track of my progress here and take pics of course as well as post the recipes. Here's what's on my list so far: veggie burgers - "meat" loaves - Mac&Cheese calzones - breakfast calzones - pizza runzas enchiladas pizza buns lasagne - soups tator tots waffles - 6 ABC nut loaf muffins I'll check these off as I make them and put amounts so I can start to gauge how much more I need to do. Sound fun? Comment as needed.

I've made and posted the veggie burgers before and made them tonight. Two batches with only three of the finished ones for any current eating (a trip tomorrow begs for them). Here's the recipe and a pic or two of the product, sans bun and other things.
1-2 cups cooked brown rice 8 oz mushrooms (or 1 1/2 portabellas) 1 1/4 cup old fashioned oats handful of baby carrots 1/3 cup walnuts or almonds 1/2 onion 1 TB garlic soy sauce or Liquid aminos to taste handful of spinach EVERYTHING goes into the food processor except for 1 cup of the rice and 1/4 cup of the oats. Process until it's kinda a paste with chunks (please ignore the connotations). Add small amounts of water if needed and scrape the sides a few times. Add the oats and rice and mix (not process) thoroughly and let sit for 10 minutes or more so the oats can help thicken... I cook this on a med flame sprayed skillet, using a large cookie scoop to measure. Using your hands, pat down the stuff until it's a patty. You might have to just wet your hands slightly to keep it from sticking.

WAFFLES!!! I Love waffles!
This waffle recipe has been floating around the Seventh Day Adventist community for years and it's my favorite alternative waffle recipe, low in fat and lotsa goodness. It's for use with a belgian waffle maker. It's a heavier waffle, but SO good. GARBANZO-OAT WAFFLES 1 cup soaked – uncooked garbanzo beans (see notes) 2 1/4 cups water 1 1/2 cups rolled oats, uncooked 2 dates 2 tablespoons sunflower seeds (I used sesame as that's all I had) 2 teaspoons vanilla extract 1/2 teaspoon salt Soak dried garbanzo beans over night. (I soak 4 cups dried garbanzos which yields about 8 cups soaked. Extra soaked garbanzos can be put in freezer for the next time you make the recipe. Take out of freezer and rinse with hot water to separate.) Place all ingredients in blender. Blend until smooth. Pour into prepared waffle iron. Bake for 8 to 10 minutes.

how about potato flautas or regular flautas, those freeze well. then when you bake them to reheat you can put a slice of veggie american cheese on or drizzle a little velveeta. and top them with guacamole and homemade ranchero sauce.
The ranchero sauce you can make in a big batch also and freeze in portions. Then come breakfast you can have vegetarian juevos rancheros. You just use beans and/or potato in place of the eggs if you think eggs might bother the baby. Both are super easy and fast since the ingredients can be frozen then assembled. Like the beans and even the potatos. |

This tastes great on everything! Oh! and theres also bean gorditas or bean tamales! Super easy and quick, freeze well...... Thats just mexican. I love doing stir frys too! molasses and vegetable boullion make a good soy/fish sauce substitute. And italian. morning star chicken patties are awesome for vegetarian chicken parmesan!!!! |

This recipe has been sought after by many friends and I've never given it out because I haven't had the time to put it together. I just made these a few days ago with rdkkks and it was SOOOOO good. VEGAN LASAGNE 3 green zucchinis lasagne noodles (no-bake) 2 jars spaghetti sauce (or a pot of homemade sauce, recipe below) 1 lb firm chinese tofu italian seasoning 1-2 tsp lemon juice salt to taste 2 batches of cheese sauce (recipe below)
