Anyone have an AWESOME pecan pie recipe?
I sooooooooo LOVE pecan pie and I want to make one from scratch this year. Everyone tells me how easy it is to make, but I don't have a recipe besides the one on the Karo syrup bottle.

Re: Anyone have an AWESOME pecan pie recipe?
Here it is! Adapted from Betty Crocker:
2/3 cup sugar 1/3 cup melted butter, cooled 1 cup corn syrup (I use half light/half dark) 1/2 t. salt 3 eggs 1 generous cup pecan halves or broken pieces pastry for 9" crust (but the smaller 9" pans--I have deep 9" pyrex pie pans that this recipe gets lost in. If you use one of those, increase the recipe.) Heat oven to 375. Prepare pastry. Mix sugar, butter, corn syrup, salt and eggs with hand beater. (Don't beat it.) Stir in pecans. Pour into pastry. Bake until set, 40 to 50 minutes. I flute the crust. Cool and refrigerate til cold, at least 2 hours. ---------- Post added at 09:55 AM ---------- Previous post was at 09:54 AM ---------- oh. . . this pie needs real whipped cream. |
