Last night was marinated chicken breast with green beans and a dinner roll. Pretty boring. Tonight will be teriyaki chicken and rice with some kind of veggie.

I am wimping out and doing sandwiches and salads today. I've noticed recently that I NEVER do super easy meals, it's no wonder I get burnt out. Even when I do something easy like hamburgers .... I add a million toppings, do a couple of homemade sides, which, yes-of course, delicious! But my 'easy' meals are made complicated with a ton of clean up and it's no wonder that after 9 years of this I am getting burned out lol.
Sorry, that was a tangent I didn't mean to go on. So tonight, I'm making turkey sandwiches on deli rolls with side salads and I'm calling it good. And I'm going to TRY to incorporate at least one or two simple meals a week going forward. Not everything has to be fancy, totally from scratch with a million sides.

I just put stew in the crock pot. Use radishes instead of potatoes! Many are fooled. Very cheap.
Last night was pizza out due to going stir crazy.

Danielle, sometimes I wonder that about myself. I used to make a taco dinner with just tacos and a side of Mexican rice. Really easy and ready quickly. Then awhile back I decided to add Mexican slaw and stuffed jalapeno peppers to this simple menu and a 1/2 hour max prep meal became an hour long ordeal. But I love the sides!

My DH is out of town for a week, and it's a busy week ahead.
Last night, we had nacho potatoes (roasted potato wedges as the chips), and I had taco salad. Tonight, it's hot, and I'm going to make raw veggies and salad, with chicken wings from the freezer. |

I have greengirl's sheet pan chicken from the April thread in the oven now, with a few modifications. I subbed coconut milk for the yogurt like she did, and I'm doing broccoli for the last 25 minutes in a separate pan since my sheet pan is full of chicken and potatoes. It has to be good with all that fresh garlic and ginger!
I finally found a good, easy gf pizza crust and made three pizzas a few nights ago, all to rave reviews. The gf crust is here at my favorite gf/vegan baking blogger:http://www.sarahbakesgfree.com/2012/...zza-crust.html and I use Pioneer Woman's recipe for the gluten eaters: 1 teaspoon Yeast dissolved in 1-1/2 cup Warm Water 4 cups All-purpose Flour 1 teaspoon Kosher Salt 1/3 cup Olive Oil

This was my plate. I should have taken a picture of someone else's. I usually take all the bits of meat that fall apart rather than pretty pieces. It's meatloaf if you can't tell.

We had chicken tortilla soup leftover from yesterday's church potluck. The broth I used (from dry-rub BBQ chicken in the crockpot) was waaaaaay more concentrated than I realized, so it was super super salty. OOPS.
