Last night was DD2's birthday so she chose Thai Shrimp Pasta, Shrimp potstickers, asian salad, and a Raspberry Lemon Cheesecake Tart.

Last night was Chili's after bringing a few car loads to the new townhouse. I had steak, loaded mashed potatoes, and broccoli.

Sure! It's super simple. (I tweak a recipe from the THM cookbook.)
2 (8 oz) packages of cream cheese (I use Neufchatel, the less fat kind) 1/2 cup chicken broth 1 tsp smoked paprika 1 tsp chili powder 1/2 tsp each of onion and garlic powders a sprinkle of salt (or celery salt) a pinch of cayenne Blend sauce ingerdients until smooth in a blender and pour over 2- 2.5 lbs of boneless, skinless chicken breasts in a crock pot. Cook on low 8-10 hrs or high 5-6. Shred the chicken at some point prior to the end of cooking with tongs or a couple forks so that it really soaks up the sauce. My seasoning measurements are approximate. I LOVE smoked paprika, so I occasionally add more and sometimes I add cumin and/or oregano depending on my mood. I serve that with tortilla chips for the kids, rice for dh, and lettuce for me with chopped or shredded red pepper, radishes, cucumber, carrots, celery, plus salsa and sour cream and any other veggies or condiments I happen to have. The kids play Build Your Chip! and pretend to they are on a cooking competition show. You can swap out the taco seasonings with Italian seasonings and add a bag of frozen spinach for another option that's good with pasta or roasted veggies, or even mashed potatoes.
