Last night we had butternut squash ravioli (from Costco) with a browned butter-sage sauce, autumn roasted vegetables, and a variation of these quick butter and herb rolls.

I think I'm gonna cop out & do chicken soft tacos. I'm leaving kiddos at home. They can cook up the tortillas. I can pick up an avocado on the way home, or ask dh to do that.
Veggies? Well, hmmm, not sure.

Coconut Thai Chicken
2.5 lbs boneless, skinless chicken breast 1 (15 oz) can coconut milk 1 c chicken broth 1/4 c peanut butter (my kids are allergic so I use tahini or almond butter) 4 t Thai red curry paste (Thai Kitchen makes one) 2 t fish sauce 1/4 t cayenne (use more if you like spice) 1/2 t ground ginger 2 t salt 1 (12 oz) bag frozen stir-fry veggies 2 c frozen chopped onions and peppers 1 t red pepper flakes Make the sauce - mix the coconut milk, broth, peanut butter, & spices. Pour over chicken and veggies in crock pot. Sprinkle on the red pepper flakes. The recipe says to cook for 5-6 hours on high or 8-10 hrs on low, but I've gotten away with as little as 5 hours on low. I often add more veggies - cauliflower and carrots work well. Green beans can get overcooked if you do the all day cooking option; 5 hours is enough. I added frozen peas tonight about 10 minutes before serving and they were perfect.

Last night I made bacon cheddar chicken (cooked the chicken in my IP, sprinkled with cheddar when it came out and topped with bacon.) I had a baked sweet potato and steamed broccoli, everyone else just had rice. (I can’t get veggies into any of them usually. Well, dd will eat salad, but she didn’t want any last night.)
