Batch cooking whole chickens
I want to get a bunch made to freeze so I can stop using canned chicken. And get some bone broth cubes stocked in the freezer.
How many would you make at once? How would you spice it? I'm thinking maybe roasting 4 to start and see how long the shredded meat lasts? Would that be like 350 for 4-5 hours if I have that many birds? Like cooking a 20 lb turkey?

I would cook as many as can fit in your roasting pan. I have one pan that fits 2, and another that fits 3. Roasting time might only be about 1.5 hours, because it is based on the weight of an individual chicken, not the total weight. I would still use a meat thermometer to check for doneness. I'll see if I can find a link to my favourite spice rub.

I can't find the link for the recipe I printed off the internet. I think this is the updated page. If you scroll down a bit, you will find the rub ingredients. Instead of cooking the chicken with all the veggies listed, my earlier version has a chopped onion placed in the cavity that has been rubbed with the seasonings. http://www.thelittlekitchen.net/whol...a-slow-cooker/ It is delicious cooked in the slow cooker and also roasted.
I use half the cayenne called for in this recipe: Rub Ingredients for the Chicken 4 tsp salt 2 tsp paprika 1 tsp cayenne pepper 1 tsp onion powder 1 tsp thyme 1 tsp white pepper 1/2 tsp garlic powder 1/2 tsp black pepper

That looks good! I also just like to stuff some rosemary and garlic under the skin and in the cavity. Sometimes lemon too.

It's normally in the 90s here, but we're in the low 70s and 50s at night when I'd be cooking.
If we go though this quickly i may make a charcoal oven. DH just scored a truckload of bricks
