What do you do with zucchini?

We are staring to get them from our garden and once you get 1,you get 100 it seems

we usually sauté them or make zucchini bread. I'm wanting some different ideas. So,how do you use them?

zucchini noodles. Seriously. One of our most absolutely delicious favourite dish around here.

I just cut the zucchini by hand with a sharp knife, so my strips are thicker than pictured, but just the way we love them.

Raw in salads or with dips. In soups. In pasta sauces. Muffins.

I second grilling it. Sprinkle salt and olive oil after. So good!

We also like it as a raw crunchy snack dipped in homemade ranch.

grilled is one of my favorites, I also chop it up, saute it and eat it in a breakfast hash or in thai red curry.

Use big slices that have been presalted and allowed to sweat in place of lasagna noodles and use your usual lasagna recipe it is delicious and GF

This doesn't use massive amounts but I like it in minestrone soup or with rice, teriyaki sauce, and other vegetables. I used to hate sauted zucchini until I learned to take out the seeded part by cutting into fourths down the middle and then cutting out that seedy part.

My mom always made 'Summer Casserole' and it's simple and delicious:
The base:
2 yellow squash diced
2 zucchini diced
1# of cooked, crumbled sausage (faux or real)
3 eggs
1 small/medium finely minced sweet onion.
Garlic powder or 3 garlic cloves minced
Salt
Pepper

Combine all items in a bowl except eggs.
Beat eggs and toss in mixing thoroughly.
Pour all ingredients in a covered casserole dish.
Top with fave shredded cheese/cheese mixture.

350° for 30 minutes or until egg mixture has set and veggies are tender!

Edit: I'd drizzle CO or EVO or your preferred oil in this if using faux meat or going sans meat while mixing everything. The fat from the sausage prolly helps cook the veggies/egg into a casserole-ish finish.
