Dry into chips. We have a dehydrator but you can use the oven. Here's one recipe. I've never tried it but it tells you how to do it int he oven. http://www.tablefortwoblog.com/zucchini-chips/
I've sprinkled them with salt or seasoned salt before dehydrating. I've also done them plain. I'm sure there are plenty of other options for herbs/seasoning online. |

Oh, chips! I'll have to try that. That's one of the few good ideas for preserving I've ever heard.
I'll stuff some in a near-empty jar of pickles. They aren't as good as cucumber pickles, but it's an easy snack.

a lot of my ideas/faves have already been listed, but I have frozen zucchini two different ways for out of season use (especially good for the big ones that are less tender). I either dice them into cubes, and freeze in 1 cup portions, or grate into 1 cup portions and freeze in ziplock bags. Easy to thaw out and add to quick breads, casseroles, pastas, whatever in the off season. When my kids were younger and pickier, I would remove the skin first - grated zucchini is nearly invisible without skin.

We love zucchini noodles too! I saute them in Kerrygold butter and then top with Mizithra cheese! Not low fat by any means!
Also really good roasted in the oven, on its own our with other veggies. I've roasted chunks of zucchini, along with onions, and other vegetables and then tossed then with grilled chicken strips and pasta for a one dish meal. You can season the vegetables when roasting however you like!

We add it to lots of things -- fried rice, casserole, chili, roasted. We sliced and lightly breaded and fried them a little in a pan, but maybe too much effort? We all like fritters, long and finely grated zucchini, carrots and potatoes, let them sit in salt for awhile and drain (then we add lots of pepper and red pepper flakes) dipped in batter, we put in the pan with coconut oil.

I ended up making a recipe from Pinterest this evening,but you guys have me wanting to grill it and definitely going to try it as noodles!!Several others on here look good too!Good thing so I won't get too bored with the zucchini!thanks!

We do noodles, cut up in stir-fry, just steamed with a bit of sea salt (not too long, though; they fall apart!), or just juiced!

I thought of another way I like zucchini or yellow squash but I had forgotten. Cube zucchini in small cubes (1/2" or less), toss in seasoned flour, shake off excess flour, pan fry in some olive oil until crispy and brown.

The noodles I've seen them done in all sorts of short cut shapes and sizes - we invested in a spiralizer that looked kind of like that one - a bit different, but essentially the same idea.
We cube it and freeze it and pull it out for all sorts of things. I add it to stir fry We use it to make zucchini bread add it to veggie lasagna we make a yummy cubed eggplant dish and add zucchini to bulk it up a bit cheaper I think there is more but I can't remember right now ---------- Post added at 09:12 AM ---------- Previous post was at 09:10 AM ---------- Quote:
