Gf minestrone with....zucchini from the garden and fresh bread. Everyone ate it without whining so I'll have to do that again. It's supposed to freeze tonight and tomorrow so i picked a ton of green tomatoes. Mostly cherry. I'm hoping they ripen and can be eaten and cook down into sauce or something.

Seriously the easiest thing ever.

Depending on the size of your family / crockpot:

1 lb. ground beef
1/2 jar of salsa
1 - 2 tbls. taco seasoning (I make my own but about 1/2 a package if you buy it that way)

or

2 lbs. ground beef
1 jar of salsa
2 - 4 tbls. taco seasoning

Cook and drain ground beef. Add to crockpot, stir in salsa and seasoning until blended. Cook on HIGH for 3 - 4 hours or LOW for 6 - 8 hours. Just make sure the crockpot is more than half full, especially if cooking on HIGH. Last night it was just three of us, I used a small crock but it was a little under half so I think it was 4 -5 hours on LOW. It's really hard to mess it up.

That's it. I'm sure you could easily double the 2 lb. version as well and I flash freeze leftovers in muffin tins, put in freezer bags and if you just want one or two tacos, grab one of the frozen "muffins" and defrost. Excellent for always hungry teens.

If you want the recipe for the taco seasoning, let me know.

Have you ever had piccalilly? (I'm not sure how to spell it. My dh's grandmother used to make it with the green tomatoes and can it. I just fry them, southern style. )

Here's a recipe. Apparently, I'm spelling it wrong! It's Piccalilli. DH's grandma was Italian, so her version was a little different, but it's essentially pickled green tomatoes. Aaaah, this one looks a little more like hers, but with more heat.

I'll bet they would make a nice chutney.

Last night I made chicken adobo. It's a filipino recipe using bone in chicken parts.

Today I made bone broth from last night's chicken bones and am turning it in to a chicken vegetable soup.

That recipe does look delicious! I bookmarked it to make one day. The "chilli (with two L's) powder -- were you able to find it in your local regular store?
It's very tasty!

She notes in the recipe that the closest thing in the US is cayenne, so that's what I use. You want pure chili powder - so just the ground peppers - not the US chili powder with all the added spices. Chipotle powder might work, if that's what you have on hand, or possibly Hot Paprika, but I don't have any right now to test it out. (I also use far less than the recipe calls for because half my gang can't handle spicy heat. The Thai peppers, which I use less of as well, add enough of a kick. The heat lovers can add more as garnish. My kids also can't eat peanuts, so we use tahini, or a combination of tahini and sunflower seed butter. The combo version to me tastes the most like actual peanut butter.)
