Sherri, I know it's hard when a family member doesn't like something. You want these yummy ideas to be crowd pleasers! Maybe you could try an idea for lunch if that's a time he's at work?

Yes it's tough. I'm soaking both black and red beans now knowing I'll be the one to eat most of them. I'm excited about these pumpkin recipes especially the savory ones. I've only had pumpkin in sweet recipes.

I really recommend trying roasted pumpkin for a savory dish. You can actually use any winter squash. I use either half a large pumpkin, 1 small pumpkin, or 2 acorn squash. Remove seeds, peel, and cut in small cubes. Toss with few tablespoons olive oil, salt, few cloves minced garlic, herbs like parsley, basil, thyme. Also can add 1/2 cup Parmesan. Bake at 375° about 30-40 min until soft.

Most people seem to like it.

So for most of these recipes, I see puréed pumpkin. I've never cut a pumpkin before. Is it possible to purée or mash with a fork or pastry cutter? I don't have a food processor and the blender is missing a piece .

I just used a potato masher after I roasted the pumpkin and scooped out the flesh. A blender would have given it a smoother texture but it worked well enough for me.

Based on my one experience roasting and pureeing a pumpkin, I'll always and forever use canned. I don't use a ton of canned foods, but canned pumpkin is way easier, tastes way better, and has better color Plus it's pretty cheap at Aldi. I stock up when they sell it every fall/winter.

is no one going to comment on my 86 rolls in ONE DAY????? We make them as a fundraiser. It is so much work, but then we are done. The rolls speak for themselves!!!! Much better than store bought!!!!

Ime how you puree the pumpkin depends on the variety of pumpkin and also how you cook it. The kind of orange pumpkins sold for jack-o-lanterns in the US are edible but not the best pumpkin for eating. You can find info online about the best varietals for eating but in general I've found that those pumpkins which are squat and deeply ribbed, and often not very orange, are good.
Afa cooking it I know roasting is supposed to bring out the best flavor but I find it easier to steam. If it is well steamed I can just mash with a fork.
If you have a tougher pumpkin or choose a drier cooking method, the blender works fine. If it's watery let it strain in very fine cheesecloth or a coffee filter to drain off excess liquid.

And, yeah, we like a smallish green kind of pumpkin. (Or I may even use a squash, that we just call "pumpkin" here ).
