Here is what I do. I just throw stuff in without thinking so it isn't always exactly like this, but this is about the proportions.
1lb ground beef 1 qt whole tomatoes 2 cans (I think - I start with dried so I think that is equivalent, maybe 3) black beans (or other beans of your choice, red kidney and white navy beans are also nice) 1/2-1 Onion finely diced (the amount depends on my mood) 6 or so cloves of garlic, finely diced 1/2 bell pepper, diced 2 tsp brown sugar and a Tbs of butter (to help bring down the acidity of the tomatoes) Chili Powder (a couple teaspoons - start small and build up) Cumin (a couple teaspoons) Salt and Pepper to taste I start in a big pot, brown the beef, then add the onions, garlic, and bell pepper to soften up a bit, then add in the tomatoes and crush those up. Add in the sugar, butter, and spices. Cook for 10-15 minutes to stew the tomatoes a bit. Then I add the beans and cook over low heat until all the flavors meld. I'm not patient, so that is normally only another 15 minutes, but my beans are not canned but cooked at home so they are already very soft and flavorful. Canned beans take longer. We serve with cornbread, cheese, and sour cream. It serves 2 adults and 3 hungry kids. If I were making vegetarian chili, I'd just start with the onions, garlic, and bell pepper, do the rest the same, and then add a couple cups of cooked quinoa in with the beans. Vegan: I'd switch out the butter as well to a vegan margarine and make different sides/toppings. |

This is my chili recipe:
1 lb ground beef 1 chopped onion 1 chopped green pepper 1 minced garlic clove Brown meat and soften veggies in a large soup pot. When browned add: 1 can beef broth 1 can rotel 2 cans black beans, undrained 1 can pinto beans, undrained 1 can kidney beans, undrained 1 8 oz can tomato sauce 1 TBSP or more to taste chili powder 1 tsp cumin 1 tsp granulated garlic powder 1 tsp granulated onion powder 1 tsp salt 1/2 tsp pepper Heat through. This is a soupy chili because that's the way I like it. Serve topped with shredded sharp cheddar cheese and crumbled tortilla chips.

Some (perhaps unusual) chili additions that I have made over the years: Chard/collards/kale Cabbage Chickpeas Butternut/acorn squash Coriander Cinnamon Cocoa powder Chipotle peppers

I brown 1 lb. of ground beef in a deep skillet with around 1/2 an onion and 1/2 to 1 green pepper (if I have one on hand). Drain grease if any and add 2 14 oz. or 1 28 oz. can diced tomatoes (regular, fire roasted, or w/green chilies) and 2 cans beans (pinto and kidney). I add around 1/4 cup total seasoning (chili powder, cumin, garlic powder, onion powder, black pepper, and oregano). Simmer until ready to serve. We eat ours with jarred jalopenos and tortilla chips. And sour cream and cheese if I could do dairy.

My own is using tomato puree - 1 can, browned ground turkey,can of beans - pinto or black,garlic , ,salt , lots of cumin, small amount of ground red pepper or chili powder because am not a HOT food fan, and then I use chopped green onions instead of the yellow kind
