Default Re: May 2020 Dinners

Made a goulash in my IP. Browned a lb of ground turkey, deglazed the pot, added bag of frozen corn, bag of frozen peas, 2 bags riced cauliflower, and a can of diced tomatoes. Turned out pretty decent, although I should have added some onion powder and garlic powder while I was browning the meat.

Default Re: May 2020 Dinners

I made a spaghetti casserole Friday that had rigatoni noodles, meat sauce, cream cheese, sour cream, cheddar cheese, and crescent roll dough. It was so good!

Last night was smoked sausage with homemade pinto beans and corn on the cob.

Tonight we had leftovers.

We’re having leftovers tonight and tomorrow I’m planning to try another new recipe - shakshuka. I’d never even heard of it until I saw the recipe so I hope it’s nice!

Grilled flank steak, sweet potato oven fries, veggie TBD.

Secunda asked for chicken nuggets, so I pulled chicken breasts out of the freezer to thaw for tomorrow. I probably should pick up some panko tomorrow.....

I used to make cabbage "flats" because they were flat with layers of cabbage rather than rolled. I tried to roll them but it never worked out.

Dh loved my cabbage flats. I stopped making them maybe bc ds didn't like them and dd is a vegetarian (and has been for 6 years). And a lot of meat dishes I still make are things that I can make 1 version meat and one vegetarian (lasagna, curry, quiche, etc).

Maybe Ill make cabbage flats for Father's Day this year.

Today is Curry. Then Calzones (or maybe Strombolis? Not sure the difference.), then Asian salad, egg rolls (frozen kind), edamame, then soup, then green enchiladas (keep trying to find a great recipe, trying another one). Thats my whole week.

So, typically, stromboli is made with Italian cold cuts, while calzone is essentially a stuffed pizza. Calzones usually have tomato sauce and often ricotta cheese in them, while stromboli do not. There is some overlap, because Americans put EVERYTHING on pizza. Stromboli is a Phillie invention, totally Italian American, while calzone is an authentic Italian invention.

Sorry, total Food Nerd Rabbit hole!

Ha. Thanks!

We are definitely making Calzones then. A stuffed pizza. No ricotta - just pizza sauce, mozzarella, a little parmesan, then the pizza toppings of choice inside (pepperoni, spinach, onions, pineapple, mushrooms, olives are the choices but not everyone uses all the choices.)

That's so funny because I made a Stromboli this week. I put it on my menu plan and then was looking everywhere in my cookbook for the "calzone" recipe I thought I was making....until I found it and it was a Stromboli! Mine was pesto, spinach, chicken and mozzarella. Glad to understand the difference!
