Default Sugar-free, healthy Yummy moist cake!

Zuccini and apple cake - no wait, its really yummy and you can;t taste the zucchini - great way to get the kids to eat some veges.

1 cup Self-raising wholemeal flour
1 cup plain wholmeal flour
1/2 cup milk powder
2 cups grated zucchini
1/2 cup grated apple
3 eggs
1/2 cup plain yoghurt
1/2 cup olive oil

Combine first 3 ingredients ina bowl.
Add zucchini, apple.
In separate bowl whick togther eggs, youghurt & oil.
Stir into dry ingredients.
Spoon into cake tin & cook 180 degrees (moderate oven) for 40 mins.

While cooling make cream cheese frosting (it has icing sugar) but i also use plain cream instead of frosting.

Beat 125 gms cream cheese with 1 tblspn milk and 1/2 cup icing sugar.

I cooked this for my DDs birthday cake and all the kids gobbled it down. Don't tell them its healthy and they'll eat it by the bucket full, right?

180 degrees? I think my oven starts out at 250. Would I just adjust the baking time?

180 is celcius. Farenheit is 350.

One thing I do all the time is make a puree out of sweet potatoes, carrots, or cauliflower. I cook them very soft and put them in the blender, then freeze them in ice cube trays. I use them wherever I can - I used to mix tomato sauce half and half on our pizza, now I put sweet potato puree only and the kids haven't noticed. I put one or two in homemade or mix macaroni and cheese, too - they've never said anything.

That sounds great for my 6 year old - I'll try it. Would you believe however that my 5 year old loves cauliflower and brussel sprouts!

Would that work well for cupcakes too? Our school has a strict policy when it comes to b-days and what we can bring(YAY!!!), so I was just coming here to ask for a good sugar-free healthy cupcake recipe..

Yep, I make muffins with it all the time - I just shorten the cooking time by about 10 mins or so. You can check if they are ready with a skewer.

Do you think there might be a way to substitute the milk powder? We don't have any, and I'm not a giant fan. Although, a sugar free yummy cake might be worth it. lol.

Well I have another muffin/cake recipe (below) which just uses flour and blueberries instead of the cocoa powder. So I'd say just use more flour instead of the milk powder.

2 cups flour
1 1/4 cups milk
1/4 cup honey
2 eggs
1 tablespoon oil
1 punnet blueberries

Mix all together, cook 180 degress celcius for 20 mins (although my oven they only take about 12 minutes for muffins to cook).


Here's another YUM cake recipe (iuse this one for birthday cakes and even the kids that survive on junk food gobble it down:

2 cups wholemeal self-raising flour
1/2 cup milk powder (or just use extra 1/2 cup flour)
2 cups grated zucchini
1/2 grated apple
3 eggs
1/2 cup plain yoghurt
1/2 cup oil

Combine first 3 ingredients in a bowl
Add zucchini & apple
In another bowl mix eggs, oil and yoghurt then combine with first 3 ingredients and stir thouroughly.
Spoon into cake pan and bake approx 40 mins in 180 degrees celcius oven.

If the kids are visitors I tend to use 1/2 cup icing sugar mixed with 250ml tub of cream cheese - if its a bit dry I add a little milk, otherwise I just use fresh cream as the frosting. Moist and yummy.
