I have pinto beans cooking in crock pot. Serving with rice
avocado salsa and cheese as wanted side of corn bread and veggie salad. We are adding today to our weekend painting project in hopes of getting the remaining cabinet doors from the first side of our cabinets at least primed. It raining though and the humidity is slowing drying time. Crock pot meal both because it's Monday and dh schedule. Also because my kitchen a big mess.

I have been cooking every night and I am so pleased with the amount of money we have saved on take out.
Last night was beef stir fry with rice and egg rolls. Tonight is beef stew with biscuits. I don't usually like to do beef two nights in a row, but my need for perfection is sometimes the enemy of my good, and it is just how the planning worked out, so is is what it is.

We had tuna salad on croissants tonight. That was all I felt well enough to make.

We had steak with lime roasted carrots and onions. It’s from Dinnerly. My son cooked it. My daughter cooked the Dinnerly box enchiladas. And my husband and daughter cooked the hamburgers and homemade fries from our box. Getting my family cooking!

While following links in the Go To Chicken Recipes thread yesterday I came across a casserole version of Chicken Cordon Bleu. Now, most of my family will not eat ham, but the idea still intrigued me and I wanted to find a version they would eat. The line at the deli counter was too long, but I happened to stumble across a package of cut ends of prosciutto in the adjoining case. Today, that got cut into small chunks and rendered on the stovetop. I also browned chicken cutlets, shingled them in a baking dish, topped with fontina cheese and a little bit of lemon/vermouth/sage pan sauce, tossed on the prosciutto bits and stuck it in the oven. Here's hoping they'll eat it.....
