good crock pot pot roast recpie?
I have the roast I also have onions, shallots carrots parsnips small potatoes and mushrooms
spices I have a good variety (dried or minced) I have beef broth.. So using the above (all or part) give me a good recipe. Like TO use the crock pot to avoid heating u the kitchen and a no fuss dinner.

I know this is probably too late, but:
Choose the herbs you wish to use. I recommend including marjoram and summer savory with beef and avoiding rosemary and bay leaf because they're poky. Put a bunch of the herbs into a small bowl with salt and pepper. Pat your roast dry and sprinkle it generously with this mixture. Put the roast into the slow cooker and turn it on Low. (I usually brown the roast all over, but you can skip this step.) Finely dice some onion and shallots (oh yum) and a carrot or two. If you are using canned beef broth, be generous with these vegetables. Saute them in hot cooking fat--pick something flavorful, such as dark green olive oil, bacon drippings, or butter--in a skillet. Meanwhile, peel your carrots and parsnips, trim your potatoes, and cut everything into chunks that you can eat in about two bites each. Pile the carrots and parsnips into the slow cooker first, then top with the potatoes. When the vegetables in the skillet are soft, sprinkle generously with the seasoning mixture and stir it around until fragrant. Pour in about 4 cups beef broth for a 4- to 7-pound roast. Bring to a boil, pour over the roast and roots in the slow cooker, put on the lid, and leave it alone for at least 4 hours. Check every hour or so thereafter. When the potatoes are tender, everything is done. You could use the leftovers as the basis for vegetable beef soup by dicing everything, diluting the pot liquor, and adding about 1/3 cup pearl barley, the mushrooms, and a pound of frozen peasbeanscorncarrots'n'limas. ETA: Forgot to say that I really pile on the vegetables, so that by the time the potatoes are in there is just the recommended headspace in the pot. 4 cups broth will not cover them. This is completely OK. Also, if you have a large, funny-shaped roast that sticks up above the level of the broth, you may need to take some of the veggies out at 4 hours, turn the roast, and put the veggies back in--potatoes on top.

I know you didn't list it as an ingredient, but my favorite way to make a crockpot roast and veggies is to load the crock with the meat and veggies, and then pour Italian dressing over the top I usually just do that rather than do individual spices. It's super easy, too!

I usually make gravy from the juices in the CP, so I do not put veggies in b/c I do not care for how it flavors the gravy. I think the mushrooms would be good though.
