How do you bake cookies without them burning? Update post #27
Mine either burn or undercook. The solution I'm doing is flipping them over halfway but then they have no puffy top. What's the secret???

My secret is to take them out as soon as I can smell them strongly. If I wait five minutes after that,they're burnt.

Do you have good cookie sheets? I have the air bake kind and never have problems with burning. Are your cookie sheets really dark?

where do you have your racks in the oven? I find cookies do best in the middle. At least they have in most of my ovens over the years, so I often adjust the racks before baking.

you also want to take them out before they look finished. they will keep cooking after you pull them out, so i usually pull them out when the middle doesn't look *quite* set, but just about.

What kind of oven do you have? Is it a fan oven? What temperature are you doing them at? I like mine pale and hate it when they are overcooked.
I've never turned them or heard of anyone doing that?

Stoneware.
It is essential for a distracted baker like me. They might be a little crunchier than I prefer, but it takes a lot to burn them.

Bar cookies . There's a much wider margin of error for time and temperature. 1 batch of the back of the bag recipe fits in a 9x13.

1. Good cookie sheets
2. Oven temp... You can buy an oven thermometer for about $5 at Walmart. Put it in the middle of the rack you'll be baking cookies on and then preheat your oven. Check the temp in 10-15 minutes. Adjust the oven temp if needed, then check the thermometer in another 5-10 minutes and adjust again if necessary. My oven runs about 25 degrees hot, and if I forget to subtract 25 from the oven temp, whatever I bake will burn

I would agree with possibly changing cookie sheets. I've used airbake/insulated and stoneware with success, but my favorite is a standard half sheet pan like this. (I bought a set of two for around that price at Sam's)
For some recipes I use a Silpat or parchment paper, but my most used recipe turns out best baked right on the pan. Chilling the dough at least 30 minutes will help most cookie recipes because the dough will spread less. You might also try lowering the oven temperature 25 degrees and baking a little longer. Though I would also agree with the suggestion to take them out earlier than you think and leaving them on the pan for several minutes. (so those last two thoughts seemed to contradict each other - just don't try both at the same time )

I've also found that a *really* annoying timer helps. Not that I remember to set it every time.
