Coconut Flour
A sweet soul came to visit us and knew we were gluten free so she brought us some coconut flour. I've never used it before and I have one bag so I don't want to waste it on experimentation. Who can give me an awesome recipe?

(IME it behaves differently than other gf flours...I think it absorbs more liquid? I have some sitting around I'd like to use as well.)

I almost always use it combined with other flours. It works well in baked goods with almond flour and tapioca starch. It also makes a really yummy bread coating for fish or chicken nuggets. If u think of something you want to make I can link recipes

It is very different than other gluten free flours. Most recipes call for only a small amount of it and also usually use something heavily as a binder (often eggs).

OOH! She also brought almond flour and I bet I can substitute arrowroot for the tapioca. Can you do bread or biscuits or something savory with those three?

Yes, I mix equal parts of all three and use it in place of all purpose flour or gluten free flour mix in most recipes.

I don't love coconut and almond flour in savory things. Perhaps I don't use enough starch Comes out grainy.

The chocolate peanut butter muffins and they came out great. DH and DS (the celiacs) would like them a bit sweeter or with frosting but it was just a recommendation not a complaint. Then we went away and just got back yesterday so I get to try another recipe this week!
