I've been thinking about trying some with gelatin...not as much as jello, but maybe about half the amount recommended for the jello recipes using plain jello with juice. It would add a little protein and body without being dairy. Pectin might be another option for thickening if you avoid gelatin, but I've never used it.
I think the honey/sugar is in your recipe to combat the sourness of the lemon juice, which is in the recipe to keep the fresh fruit from browning. You might be able to substitute a bit of juice with added vitamin C, or maybe orange juice.
