What's cooking in June?
Okay ladies, bring on your dinner ideas and pictures for June!
_______________________________________________ Tonight I'm trying America's Test Kitchen/Cooks Illustrated Chicken Parmesan. DS11 and I have been into watching American's Test Kitchen on Netflix and Amazon and this was one of the recipes we watched and it looked so good! I'm serving it with whole wheat spaghetti and sautéed baby zucchini. What did you make for dinner tonight?

I didn't get a picture tonight, but it was gorgeous. Sture-fried purple cabbage with mushrooms toped with broccileenie, fiddle head's and chicken strips cooked with coconut non soy soy sauce.

We're detoxing from a weekend with dear friends who don't eat vegetables
Salads for DH & me: spinach + the first lettuce from our tiny garden, with grilled chicken, zucchini, broccoli, red pepper, carrots, golden raisins, sliced almonds, and strawberry poppyseed dressing. The boys had small salads plus a piece of toast, some dry-rub BBQ chicken from the freezer, and we all had fresh raspberries for dessert. On sale at the grocery and they actually were delicious!

Last night I made this:
To 1 pound ground beef take 1/2 bunch celery (thinly sliced), small bunch bok choy or Napa cabbage (ditto), small onion (slivered), 1 1/2 cups good broth, 1/4 cup soy sauce, 1 clove garlic (minced) or 1 tsp. powdered garlic, 1/2 tbsp. fresh ginger (ditto) or 1/2 tsp. powdered ginger, 1 1/2 tbsp. cornstarch, 1/2 cup cold water. If ground beef is very lean, also take 2 tbsp. canola oil. Put on a pot of rice. Saute the beef and onion together in a large skillet. When nearly done, throw in the celery and let it cook on top. When celery is no longer crisp, add ginger and garlic and stir until fragrant. Add broth and soy sauce, bring to a boil, pile bok choy or Napa cabbage on top, put on the lid, turn down to Medium, and leave for a few minutes. Meanwhile, shake the cornstarch and water in a screw-top jar. When the bok choy or Napa cabbage is tender, turn off the heat, stir in the cornstarch mixture, and let stand for a few minutes to thicken slightly. Serve over hot rice. Makes great leftovers.

Turned my homegrown heirloom tomatoes (frozen from last year) in to a homemade spaghetti and meatball recipe. Served over pasta for the kids, and zucchini noodles for dh and I.

Ground sausage with onion, sour cream and shredded cheddar cheese mixed together then shaped into patties. The original recipe calls for buttermilk, but we use sour cream(since we usually have that around).
