The Cupcake Wars folks might be using natural ingredients from the look of it (though you never know...sometimes you do see people cooking with chemical additives even in those shows), but when it comes to local bakeries, I know that many STILL buy cake mix. Commercial mix instead of boxed mixes, but yep, the kind with funny ingredients beyond flour and sugar.

I think that's where the applesauce comes in. You can replace all of the oil with it.

Pumpkin works, too...makes a dense fat-free cake, almost brownie-like. Not for the OP's purposes, but if you're looking to leave out the fat...

I ended up waiting because I was too sick to make food for others in good conscience.
But last night I made my first experimental cake (did a cake instead of cupcakes). Tune My Heart's fave looked like a bundt cake version and I'm not usually too fond of those but I'm not sure if it was by flavor as well as shape. I made a version that looked really similar to what Green Orchid posted: http://www.marthastewart.com/recipe/...chocolate-cake With this frosting: http://www.marthastewart.com/recipe/...tion-container (except I used Trader Joe's cocoa powder). The frosting was phenomenal, though it does have a slight bitter tinge to it (which is likely due to the brand of cocoa I used). The cake was very moist, light and fluffy, but not chocolatey enough. (And I doubled the chocolate to make two layers, and it was a lot more chocolate than Green Orchid's recipe so I expected BAM!) I'm thinking I may be looking more for a "devil's food" cake, so need to figure that out. Again, it could be because of the brand of cocoa I used, but the cocoa smells really good to me, so . . . ? It was a very easy cake to make. Kind of strange to me that there are no eggs! But it was good. Now I want to have a piece . . . LOL. And I might try TuneMyHeart's next, and then see if I can find a good devil's food recipe. Natalie, did you try any? |

just fyi, that cake isn't a bundt cake. I use it to make cupcakes or a regular round or rectangle cake.

My favorite chocolate cake that I have tried is the Hershey Perfectly Chocolate Chocolate Cake one. I have never made cupcakes with it, though.
A lot of people like Pioneer Woman's chocolate cake, which she uses for cupcakes, too. I like the taste of butter cakes, but I think oil produces a more moist cake.

I was using the Trader Joe's cocoa & have stopped because it definitely was way less chocolaty then Hershey's cocoa.
