that pesto-tomato-cheese chicken looks/sounds DELICIOUS!
think we're gonna do chicken and veggie stirfry tonight. I have some leftover Pad Thai sauce in the freezer, and we need a nutritional reset after eating garbage all last weekend (and more coming this weekend for me). I don't think DH and the kids saw anything green all weekend (we were out of town) so we'll load our plates with vegs tonight.

Tonight it's going to be veggie stew with cornmeal dumplings Hubs brought me two butternut squash from his mom's garden so I didn't have to buy one so yeah for free produce.

Not sure what a Scotch beef burger or a baby crash potato is, but that sounds like the ingredients for a cottage pie!
We're having leftover lasagna Florentine and apple pie. My first ever scratch pie and it turned out beautifully!

Our main meal is lunch and we had Ham Bone Soup... made with the leftover pork roast from yesterday. Yummy!

We're celebrating dh's birthday so I'm making Thai green curry (with chicken, eggplant, and greens), rice, sliced tomatoes and cucumbers on the side.
I made a maple-nut cake. It smells like pancakes. I hope he likes it...

We (as in my husband and I) don't eat flour, so no pasta, but used my julienne peeler to cut up zucchini and carrots and will sautee those in olive oil to use as the "noodle." Also some sort of spinach salad. I'm not sure which variation yet. Per the request of my 8 year old, I'm also making mini pizzas on english muffins for the kids.

DH made chili but is more a chili flavored beef stew- chunks of beef, V-8, roasted tomato purée, carrots, potatoes. I think it is going to be good.
For lunch I'm making BLT since I have all the ingredients in the house.
