Re: September Dinners
Oh ack, I just realized I threw away my chicken carcass from the other night. I wanted to make stock!
Oh and in other news, I just used up the last of a 10 lb bag of potatoes in one week! I guess we've eaten a lot of potatoes this week. Might want to vary my menu plan a little more for next week. Save

Re: September Dinners
I went to a party at Chuck E Cheese tonight and watched everyone else eat pizza, red velvet cake, and cheesecake. On the way home I stopped at Five Guys and got a bunless double bacon cheeseburger and fries. At 10 pm

Pioneer Woman's hamburger soup. I was hoping it would get good enough reviews for me to make it for another family this week, along with a loaf of gluten free bread, and the consensus is

Re: September Dinners
I work every night this week, so I've got a bunch of crock pot meals planned. Tonight is Cheesy chicken (from the THM Cookbook) that my kids make into nachos with red pepper, radishes, carrots, and cucumber.
So simple - puree 2 packages of cream cheese (we use Neufchatel) with 1/2 cup of chicken broth and some spices in the blender, pour over 2-2 1/2 pound of chicken breast in the crock pot. Let it go all day (8-10 hours) on low or 6 hours on high and it shreds into creamy, cheesy yumminess. The recipe calls for Cajun seasoning, but I've never found one I liked, so I make my own blend with smoked paprika and some other spices. It's a good base for loads of different flavors. It even works with frozen spinach tossed in. My kids get a little persnickety about one-pot meals, though so I have to restrain myself from TOO much experimenting.

We had a new recipe tonight: AIP Pork Carnitas. Served with rice, steamed cauliflower and misc. veggies. Very good!
