Ina Garten's Penne Alla Vecchia Bettola and our favorite salad, Baby Kale Salad with Lemon, Parmesan & Crispy Roasted Chickpeas. Also making Peanut Butter Chocolate Lava Cakes for dessert.

Tonight I made polenta in the IP.
Topped it with a bell pepper, tomato, and spinach sautee and two sunny-side up eggs. Modified the recipe from PlateJoy. It was good. Very pretty, too. Wish I had taken a picture. Everyone ate it but it wasn't a huge hit with everyone. But I liked it. Next time I won't use bell peppers, though. I'll use different vegetables and maybe add spicy sausage. |

I hardly feel like moving today so DH is getting pizza for himself and the children. I don't know if I'm actually going to eat anything Hopefully tomorrow will be better!

My guys are making chicken and rice stuffed peppers. I think I will have them saute some cabbage to go with it since we have some that needs used up in the fridge.

Tonight I made beef stroganoff over rice (or zucchini noodles). Roasted carrots, onions, garlic, mushrooms and beets! So delicious.
