quick and simple things to eat?
I am trying to move towards a more whole foods, vegetarian type diet for myself as well as for my family.
I would like to get away from processed foods, but am finding that difficult. Right now, my downfall is tostitos. What do you eat that is quick and simple? It seems that everything takes time and planning and while I am ok with that when I do have the time to plan ahead and prepare things ahead of time, often I do not have that sort of time. What are some simple, quick things to prepare and eat in a hurry? Thanks!

I'm not vegetarian- but I threw some vegetarian black bean soup in the crock pot!

My favorite quick snack is Ezekial bread toasted with coconut oil and jelly. Hmmm. It's also good with a nut butter and raw honey. (not a whole food but quick and healthy at least )
I've also started washing and cutting up our veggies for the week so that I can just grab them out of the tupperware container quickly. I cut up a couple heads of broccoli, celery and baby carrots. I also wash and pull all the grapes off the stem and stick them into a container. We eat lots of apples and bananas. Hummus is easy to make and you can eat it with pita or veggies. We also eat string cheese on the go. We buy dried fruit and nuts in bulk and I mix those up. Dd and dh like dried dates, I think they are . Avocado is awesome too! I feed it to ds straight out of the peel and I love to add it to a grilled cheese sandwich or eat it on toast. Yum! Over time we just stopped buying grocery store 'snack' foods and I got used to not craving and eating those things. Dh still buys potato chips and they can sit in the top of the pantry of weeks and I won't open them. It' just kind of a process and after time you get used to eating other things. We kind of cut out one food at a time. I'll be watching for others ideas as well! |

I like the "Saving Dinner" books. Every recipe is delicious and takes 30 minutes or less from refrigerator to table. She has one book of vegetarian recipes. I haven't used that one but I would assume it's similar to her other books.
