We tried these Chorizo Breakfast Bowls for dinner tonight....so yummy!
And tomorrow I have to work all day, so I prepped what I always make for St. Patrick's Day for tomorrow: Beef Guninness Pies Fried Cabbage with Bacon, Onion & Garlic Irish Soda Bread Irish Apple Cake with Custard Sauce

Didn't end up having the roast and mashed potatoes over the weekend so made it last night. I made buffalo chicken salads instead. So tonight I'm going to make stroganoff from the leftover roast with cauliflower on the side.

I made up a Mexican casserole:
Canned chicken chunks mixed with cream cheese, taco seasoning, and black beans. Dumped it on top of a layer of flour tortillas. Covered in cheese. DD ate two helpings

Last night I cut up and roasted 5 butternut squash, 3 big bunches of asparagus, and some b/s chicken breasts (did those on the stove.) Seasoned everything with salt, garlic, rosemary, and basil. Was so good and simple.
Tonight we had Thai takeout for my son's 14th birthday. Tomorrow I'm planning to roast a big pork shoulder. I don't really like pork but it was $1/pound so I bought several. I am going to shred some for Mexican, slice some for Asian, and maybe shred some for BBQ. We'll see. I'm trying to stretch things. Today, I was thinking about all the thrify recipes that came out of the big wars and the Great Depression. I wonder if we'll come up with thrify recipes because of the shortages. ---------- Post added at 09:44 PM ---------- Previous post was at 09:43 PM ---------- This thread could get really interesting as the weeks go on. |
