It's Fishy Friday, so I made the kids fish sticks and peas with homemade oven fries.

I made a cheesy cauliflower and tuna casserole for the adults. Totally low-carb version of Tuna noodle casserole.

Slow Cooker Thai Chicken Soup with Wild Rice from Carlsbad Cravings. I skipped the apple and added both lime and lemongrass essential oil at the end. Whole family loved it. Even though wild rice is definitely not Asian, the flavor profile was delicious and tasted like it was from a Thai restaurant.

Leftovers tomorrow.

Thursday I'm roasting a turkey.

I need to figure out Wednesday. Maybe breakfast for dinner.

We had Mexican chicken and rice bowls and black beans.

Yesterday meatloaves with carmelized onion tomato sauce and mozzarella, green beans, and roasted potatoes. So good!

Half my family is fasting during dinner because it's Holy Week. It's the picky ones that are "eating" dinner. At least I know lunch is taken care of for the next day.

DH cooked chicken fried rice, stir fry cauliflower, and dumplings. He put a whole chicken in the instant pot for tonight. We’ll eat it with rice, gravy, cauliflower, and asparagus.
