My nephew and his wife just got back with me for more information they are finding with using the Agua faba from chick peas:

The liquid from a can of chickpeas will behave like egg whites in nearly every baking application. You can even whip them just like egg whites for an angel cake or meringues.
Many online sources recommend 3 Tbsp aquafaba for 1 egg white and 4 for a whole egg.
Personal experimentation has proven 3 Tbsp aquafaba and 1 tsp flaxseed (mix and let sit a few minutes) works more like an egg. The aquafaba provides lift like egg whites and the flaxseed helps bind like the egg yolk.

Side note, there are some recipes for making Chickpea Cheese sauce and sliced cheese on youtube. I have watched by not tried and like the looks of the videos from Maria's kitchen (if you care to search that out.

Tonight’s make do dinner - a box of stuffing and a can of chicken.

Normally I would add celery and onion to dress up the stuffing and I could have used some of my shredded chicken but it’s frozen and my husband wouldn’t let me off the couch all day.

I went through my freezer and fridge and am doing an experimental crockpot meal tonight. I found a bag of shrimp and some frozen stir fry veggies, and then found a bottle of Buffalo Wild Wings Garlic Parmesan sauce in my fridge, so I plopped all of it in the crockpot. Hopefully its tasty and not gross!

It turned out a little liquidy, so I threw in a box of chickpea pasta I had for the last 15-20 minutes, which was just perfect to sop up the extra liquid. It did end up turning out tasty!

I made gf pancakes the other day from gf oatmeal I had on hand that I ground into flour. It was really easy and didn't take a ton of ingredients, mostly just staples.

I used chicken wings last week for a meal and they were really good. I just can't seem to buy anymore of them as they are no longer available.

I bought a whole boneless ham a few weeks ago and cut it into thirds and froze. I've used two of the portions so far: one to make ham and bean soup and another to make potato and ham soup.

I was so upset yesterday as I went into the laundry room and smelled what I thought was a dead animal. Come to find out, when I dug through the deep freeze for the chicken wings the other day, I had inadvertently left out a bag of meat (a package of chicken breasts and two lbs of ground beef). I hate losing that meat right now as it is so hard to come by.

Oh no, Charla! The other day I was distracted I guess, wiping down groceries before I put them away... The next day I found a pound of grass fed ground beef in the drawer with the plastic wrap and foil! It hurt to have to throw it away.
