More deep thoughts about fudge ....
does anyone know how long it will last outside of the fridge? Does sweetened condensed milk last long? I was thinking of sending some to my sisters in the states. |

Fudge is so easy - you can do a microwave version. I made a fudge the other day for coworkers - I had a bit of leftover german baking chocolate - I think a 4oz bar which I melted. I added the about a half to 3/4 can of sweetened condensed milk, a few tbsp of chunky pb and a bit of almond (instead of vanilla) and mixed it all up after all melty in the microwave. Poured into a greased pan and let set in the fridge overnight. Delicious. Totally easy too
Can do it with a bag o' chocolate chips (any flavor) , add marshmallows, nuts, whatever. Fudge is so easy and people think you slaved for hours lol |

COCONUT OIL FUDGE 1 1/2 cups coconut oil 1 1/2 cups raw honey 1 cup cocoa powder 1/2 teaspoon salt 1 teaspoon vanilla extract (optional, tastes fine without it) Dump it all in the blender and mix till smooth. Pour it into a pan (I use a 9x13 glass pan) and let it set up. Depending on your climate and time of year you may need to refrigerate it if it's over 70 degrees or so in your kitchen. Cut into small pieces and try not to eat it all the first day. I made a half recipe & put it in an 8X8 pan, and it was really thin. I just stirred it in a bowl. Next time, I will use wax paper to line the pan, a little less salt & less honey. Also, I need need to keep it refrigerated.

Maple Nut Fudge
3 cups sugar 3/4 cup butter 1 5oz can evaporated milk (DO NOT USE CONDENSED) 12 oz white chocolate chips 1 7oz jar Marshmellow Creme 1 cup chopped walnuts 2-4teaspoons Maple flavoring (basically to taste) LINE 9-inch square pan with foil (I like using the Reynolds Release foil!). Place sugar, butter and evaporated milk in large heavy saucepan. Bring to full rolling boil on medium heat, stirring constantly. Boil 4-5 min. or until candy thermometer reaches 234°F, stirring constantly to prevent scorching. Remove from heat. ADD chocolate and marshmallow creme; stir until completely melted. Add walnuts and Maple flavoring; mix well. POUR immediately into prepared pan; spread to form even layer in pan. Let stand at room temperature 4 hours or until completely cooled; cut into 1-inch squares. Store in tightly covered container at room temperature. EggNog Fudge 2 cups Sugar 2/3 cup egg nog 3/4 cup butter 12 oz white chocolate chips 1 7oz jar Marshmellow Creme Same directions as above. The original recipe called for 3cups of sugar but I thought it was too sweet because the Eggnog is already sweet. You can also make this with just the egg nog and chocolate...makes a softer fudge but stll very good. for that use about 1.5 cups egg nog heat it up and then add 12 oz white chocolate chips and stir until melted and pour into pan. |

Thanks Ladies! they ALL sound scrumptious! I just whipped up a batch of the plain chocolate and added a third cup of Baileys Irish Creme I\ll let you know how it turns out!
still wondering about lifespan of fudge if anyone knows! |

I want to make some for my dad. I just found out his favorite candy is fudge and my mom hates fudge. I thought it might make for a nice gift just for him.
btw, when I found out it was just my mom, dad, sis, and I in the car...like a week ago. I asked what type of fudge was his favorite. We then went on a round of naming things we could fudge. It was hilarious. We ended up completely hysterical over the Jewish fudge...Gelfite Fudge. Yes. Gross. I know.
