Finally making the mole I had planned for Friday. I'm frustrated though, with my IP. I got the bigger 8qt one and seem to hit burn every other time I cook. I put Spanish rice in it tonight. I'm hoping it turns out. It said burn so I took the lid off & stirred and restarted. :fingerscrossed

Tuesdays are "family night" simply meaning DH doesn't have to guzzles down dinner in 8.4 seconds before dashing off to more rehearsals and such.
Tonight we are having pan seared chicken breasts with a white wine deglaze sauce (not for girls) , quinoa, roasted zucchini, and what ever loaf of bread looks good at our Frys when I pick up DH from work.

I have a bunch of leftover grilled chicken thighs. I'm going to debone the chicken and make an Asian stir fry with broccoli, bell peppers, onions, Thai fish sauce, peanut butter, and tamari.

Shepherd's pie. One of my regulars. This time there's a smaller vegetarian dish with lots of chopped mushrooms instead of meat.

I love Shepherd's Pie! My mom calls it Farmer's Pie if she uses ground beef. (I wish my kids would eat it! )
We had meatball casserole - meatballs smothered in homemade pizza sauce and topped with mozzarella cheese - with sauteed green beans, carrots, and peppers on the side.
