I've got chick peas in the instant pot. Indian coconut curry tonight. Except th who won't tough sweet potatoes or chickpea meal soup over rice for him.

Dh grilled boneless pork chops, made a fresh veggie sautee out of zucchini, bell pepper and onion, and cooked some frozen french fries.

We're having pulled pork tonight.
I have a purple cabbage that I might turn into the cabbage and grapefruit (I actually only have a pommelo) salad from the latest Cook's Illustrated mag. (Prima went through the magazine and marked all the things she would try, and that was I think the only vegetable.) I should probably make an actual cabbage slaw, though if I do for the picky ones.

Asian Burritos with Ginger Salsa 3/4 lb ground beef 1 c oats 1/4 c hoisin sauce 3 T water 2 T soy sauce 1/8t cayene tortillas 2 c shredded cabbage, we use red 1 medium carrot (or more) shredded plum sauce Cook & drain ground beef in a skillet. Ad oats & stir. Add hoisin, water, soy sauce, and cayenne. Let simmer a few minutes. I've found this works best if you mix all the sauce ingredients before adding. Serve in tortillas with plum sauce, shredded cabbage & carrots. We don't usually make the ginger salsa, but here's the recipe. Just mix the ingredients: 1 large tomato, finely chopped 1 T fresh cilantro 1t fresh ginger, finely chopped Suggested serving is a big green salad and baked sweet potatoes. This is easy to adapt for gf and I would imagine using lentils in place of ground beef would work well for vegetarian.
