Last night we had pot roast, potatoes, carrots, mushrooms in the crockpot. I made zucchini chips and gravy to go with it. And a salad.

Tonight was ground turkey with diced peppers and onions over rice
Plans for the coming week. Days listed but meal order might change depending on schedules. Friday:Coconut shrimp with coconut brown rice Saturday: burgers with potato chips and fruit salad Sunday: sweet potato and chick pea curry Monday: meat loaf mashed potatoes and peas Tuesday: pinto beans and corn bread with veggie salad Wednesday: Take out day to be decided Thursday: Pesto Pasta salad and garlic bread

Mediterranean pasta and Greek salad last night. Buffalo wings, crispy potatoes, carrot and celery sticks, and tossed salad based on wedge salad with red onion, tomato, bacon, blue cheese

In general I also know that Sundays, Tuesday, Thursday and Saturdays I can have time to cook and we have time to sit as a family. Mondays are often crock pot days as dh could be home at 4 or not till after 5 but leaves again by 6:30. Wednesday ussually too busy to come home so we all just get it to go. Fridays we are all home but ballet schedule means nothing till after 6pm so generally want something I can do quickly.

Homemade Pizza Night!
Dough is rising and sauce is cooling. Dh is making garlic confit this afternoon, and I'll caramelize onions when the kids are done making lunch.

We ended up just going out for dinner. We are repainting our kit when cabinets and my kitchen is a mess right now. I was just to tired to cook. We had egg drop soup and broccoli with oyster sauce for the girls and I. Sweet and sour pork and fried rice for dh.

Dh has been on this lamb kick lately. (We have three boneless legs of lamb in the freezer. He's going to sous vide one for dinner tonight.
He was experimenting with the sous vide function on the IP for Christmas dinner and the kids couldn't stop raving about how good the lamb was, so he's tweaking the seasoning and making it again tonight. (It was amazingly tender.) Not sure what veggies to have on the side, but I'll at least make a salad.
