We're having a cajun shrimp and kielbasa sheet pan dinner. I don't think my kids will be happy because there are red peppers, green zucchini and yellow squash.

Yesterday we had chicken parmesan and garlic toast today was pork chops mashed potatoes and broccoli tomorrow were doing bean cheese and rice burritos and probably salad.

Have you ever made garlic confit? It's essentially garlic cooked in olive oil. (1 cup of EVOO to 3/4 cup of whole, peeled garlic cloves - barely simmer over med-low for 30-40 minutes) It gets sweet and soft, just like roasted garlic. You strain out the garlic and mash it for all sorts of uses; it's good in mashed potatoes, on veggies, etc. The garlic oil can be used as a pizza sauce, tossed with pasta, etc. I buy the pre-peeled garlic from the grocery store for this.

You could add some lemon juice and/or zest to the confit or the garlic oil.

Otherwise, I would just saute minced garlic in olive oil (slowly so it doesn't burn) add salt, crushed red pepper, lemon zest, and any other seasonings you liked from the bowls and drizzle a little over the top.

I have not made a garlic confit. That sounds like something we would like.

I think dh is making pasta for dinner. The girls & I hiked 4-6 miles today. I'm beat.

She likes fish fries on fridays. Since those are all cancelled I tried to do it at home. I’ve done it before but this was a huge disappointing fail.
