Ours takes 2 weeks at 65-68. My house is drafty.

Really? Mine goes about 2-3 weeks in this weather. I wait until the scoby up top looks thick enough to tear off, and the tea has turned from a dark brown to an auburn hue. Then I take it out of the large jar I keep it in and dip up about 2 cups for the next brew, and bottle it.

Sounds about right. When it's in the 70s-90s here in summer to fall, we brew at 1-2 weeks. It seriously grows fast and I have to worry about fruit flies and such.

Its ALIVE!!!!



I moved my kombucha upstairs to my bedroom closet...I forgot to try more sugar

But today I looked and the scoby is at the top and have the tiny white dots of a new scoby forming

I googled and found a picture exactly like mine! I was worried for a second that it was mold.

I am hoping this brew will be usable.

Mine's been sitting for 2 weeks. It sat for about 6 before that. Ain't nobody got time for booch around here right now. It's still growing and my scoby is lovely these days.

I got tired of it and made a SCOBY hotel I'm messing with kefir now, but man that's even more of a pain!! I want to like this crunchy stuff

did you flavor it or anything? I read a post about putting it in flavored tea and it getting some of the juice flavor.

my scoby (to quote DH) smells like death. (I like the way it smells )

No, it was just plain. That's good to keep in mind, but not now. I don't want to raise the bar yet.

I also like the smell of it. I love when the kids have KT breath.

I just finished this thread in 3 days. I dreamt of booch last night. A gcm is bringing me a SCOBY this weekend. I have my glass jar, but it's a square gallon. Quite large. Will it make my new SCOBY ungangly and hard to manage/take out?

I can't believe how excited I am to start. This is coming from the girl who used to throw out bottles of water if they were opened the day before cause it might have things growing in it I couldn't see.

Good for you, Cate! The SCOBY is really flexible it won't matter at all if the jar is square.

What are the best bottles for fizzy 2nd ferments? The grolsh ones? Hubby was excited when I told him that, he'd love an excuse to drink a bunch of pricey beer.

Those, IMHO work the best. I just get similar bottles from Ikea. I was keeping water kefir in them also, and found that just worked better for fridge storage. Now, if I could figure out how to fit all of that + the groceries that have to stay cold in our fridge and convince DH we do not need so many sauces...

What material should my ladle/funnels be? Can I use plastic as long as the KT isn't in contact for a long time? Never metal though, right?

I use a metal ladle and plastic funnel. It's only in contact with it for a short period of time.
