I use this recipe for eggroll in a bowl but I shred my own cabbage and carrots and add diced zucchini and water chestnuts. I think chopped mushrooms would be good, too. Just trying to amp up the veg factor. And it's so easy!

Recently I've made both corn chowder and white chicken chili from Carlsbad Cravings. My family loved both soups.
Yesterday I went to Costco and had a very bad migraine which thankfully lasted only 7 hours! We had Costco rotisserie chicken, sourdough bread, and avocado ranch salad from a bagged kit. Today I'm still recovering so I'm making spaghetti, salad, and bread. I'm roasting spaghetti squash to mix in with the pasta. Friday is DH's day to plan and do the bulk of the cooking. He's making pizza. Saturday will be pot roast in the instant pot, creamed corn in the slow cooker from Carlsbad Cravings (this is soooo good), mashed potatoes, and salad. Not sure about Sunday yet but we usually don't get home until 3 on Sundays so I have to think fast. Last edited by Soliloquy; 12-03-2020 at 05:32 PM. Reason: Auto correct |

Last night we had a skillet quish years ago I it was my go to foe Sunday night dinner. Now I have found that I ether need a bigger skillet or I need to only plan in when dh and I have had a larger lunch than we did yesterday. The whole thing was quickly polished off and everyone was still hungry.

We used to do that as a child and I LOVED them. I have to get some for my kids. that's definitely a fend for yourself meal that would be fun.

They live about an hour away - gf lives here for school - so ds1 is taking them some meals that I've been working on today.
