Greek chicken and potatoes with salad (greens, snap peas, cherry tomatoes, cucumbers, red onion, basil, and sunflower seeds). My SIL is visiting and she's dairy-free/soy-free, and this is one of my favorite meals anyway, so it worked out great.

I use the same marinade (the olive oil, lemon juice, garlic, oregano, salt, mustard) for both the chicken and the potatoes. I usually make a Greek salad too (no greens, peas, or seeds; add feta cheese and Greek salad dressing) but then it wouldn't have been dairy-free.

Oh all the pictures of macaroni and cheese. That is the one thing that I really really miss about being dairy free. I have other things I can do, but they aren't the same.
