Just had to pop in tonight to search for TuneMyHeart's delish recipe. We have made this over and over in recent years (I just misplaced it) and it is truly the best chocolate cake we've ever had. As I had originally requested, it is a natural recipe that even standard boxed cake mix kids have loved! Dd had a yen for baking tonight, and I told her I'd find this for her to make again. Orange Butter Cake
~The Whimsical Bakehouse cookbook~


8 ounces unsalted butter (2 sticks)
2 cups sugar
6 large eggs
1 1/2 teaspoons pure vanilla extract
3 1/2 cups cake flour
1 tablespoon plus 1/2 tsp baking powder
3/4 teaspoon salt

1. Grease two 10x3-inch round pans. Preheat the oven to 350 degrees. Have all ingredients at room temperature.

4. On a piece of waxed paper, sift together flour, baking powder, and salt.

5. Add the dry ingredients alternately to the butter and egg mixture with milk, orange juice, and orange zest.

6. Pour the batter into prepared pans. Bake for 20-30 minutes or until cake tester inserted in the middle comes out clean.

7. YIELDS: 9 cups of batter

Quick cakes I usually just use the chocolate cake on the back on box of Hershey Coco powder (the unsweetened baking kind) which is pretty much idential to what the above says except the hershey calls for veggie oil which I've used olive coconut oil or even butter as a replacement just fine. Hershy one uses less sugar but also does have milk.. I dont consider it healthy by any stretch but better than boxed for sure.. It always gets raves though. We dont do frosting we find them all too sweet.

Yeah, definitely not health food, but the list of ingredients on most of the boxed cakes is loooooong and yucky looking!

Argh! I have been trying several chocolate cake recipes the past few months to find "the one". So many, that I am really tired of chocolate cake! I found "the one" last week. Now, I see this post. Since I have not tried TMH's recipe, I feel like I have to make yet another one, just in case.
