Walnut pomegranate stew! It's real name is Fesenjan but I have no idea how to pronounce it and the children call it walnut pomegranate stew.

Have you ever done a Cuban breakfast? It has all that in it. dh makes it, its so amazing. I have to see if I can remember the ingredients (since he makes it). he was supposed to make it this week but then he realized he didnt have all the ingredients on hand. He seems to think if he gets avacados we just must have everythign else all the time (because sometimes we do).
Rice, mex cheese, black beans, green chilis, green salas, avacado and then a fried egg on top. So so so good. I prefer it to dinner over breakfast. Tonight is pesto pasta, squash and zucchini

I'm planning to make Mediterranean baked tilapia, Greek potatoes, and Greek salad. My first time to really cook for 10 days besides the chili I made over sterno the first night of not electricity and the chicken rice bake I made in the crockpot the beginning of this week. I never thought I'd be so happy to cook! And fish at that!

Crunchy shell tacos with some side veg tbd. But we have leftovers AND ds has a afternoon game an hour away so not sure if it'll be tonight or if that'll be tomorrow.

I’m trying to meal plan. I can’t think and I’m not having any inspiring luck scanning old threads. Those taquitos are on my list but we just had chicken 2 nights ago (last night was burgers and hot dogs) so not for tonight. maybe Aldi pizza for supper tonight, the kids like that?

I cooked dried pinto beans in the crock pot today. I always soak them first before I cook them, so I wasn't sure about this but they're tender! I added diced onion, celery, broth, spices, and cooked sausage. I'll serve over rice or with tortilla chips with toppings like cheese and sour cream. It couldn't be a cheaper or simpler meal, and so fragrant, so I hope it's tasty.

I thought it was completely amazing! I would totally make this one a week all winter long. The family not so much. Dh said it was good but he wouldn't be ask for it again ( he would with out complaining eat it every week all winter) wiggle worm ate the olives off of the top, 3 chick peas and a bit of millit. Made chili yesterday and ate it over corn bread. I’m thrilled to have left overs for work this week.
Making an early dinner for today 2 shepherds pies. One with beef and one vegetarian. |
