Default Yummy Gluten Free Christmas Treats!

My dd needed to bring authentic German cookies to school this week and we made Zimtsterne. (Cinnamon Stars) I realized part way through that this traditional German Christmas cookie is also gluten free and thought I'd share it here for any who are interested.

They are made from ground almonds and egg, with a merengue topping. They are lightly sweet, but get sweeter as you go along because you use powdered sugar to keep them from sticking as you roll and cut them out. While a bit labor intensive, I really enjoyed painting the merengue on top and topping them with sliced almonds. They were pretty impressive looking and her German teacher went nuts, so to speak.

We make so many! One naturally GF treat is buckeyes. All the recipe links I could find though add butter to the peanut butter. We make them with just peanut butter mixed with enough sifted sonfectioner's sugar to give it a firm dough consistency and then dip the in melted DF dark chocolate. Then people who can't have dairy can enjoy them too!

I wonder if you culd make the cinnamon stars with yolks instead of whites (DS2 can't do egg whites but the yolks don't seem to bother him). Obviously I'd need a different topping but I bet EF royal icing would work ok-ish.

Ooooh, buckeyes sound so yummy!

I don't think the Zimtsterne would work with yolks only. The whites make them chewy and I think the yolks would make them hard?

I've tried several different recipes and all have been good - grain free mexican wedding cookies/almond crescents made with almond flour instead of flour. (to be truly grain free you have to find conf sugar without cornstarch, one of the organic brands is) Since they're mostly nuts and butter anyways, it's not too much of a change and really really good!

Oh, and the peanut butter cookies that are just pb, sugar and an egg. No flour to worry about at all!

Our best ones have been from Elana's Pantry blog. Almond Joy bars and peppermint patties. But you can buy the peppermint patties at Trader Joe's for a whole lot less trouble

I make gf ef chocolate chip cookies. Starting with the toll house recipe, I use equal parts white rice and almond flours, equal parts (but less than the previous) sorghum and millet flours, and an extra almost 1/4 cup of tapioca starch plus some zanthan gum for the flour and I use flax eggs for the eggs, they are delicious! Like other people ate them without knowing what they were and loved them. I've done it without millet and they are good that way too.

ETA: use ghirardelli half dark half semi sweet chocolate chips. Try sprinkling some seat salt on top, too.

I just made GF pumpkin gingerbread by subbing Bob's Red Mill 1:1 flour for the wheat and adding an extra egg. (Oh, and I beat the heck out of it in the mixer! ) Not truly original, but dd loved it just the same.

Last night we made thumbprint cookies. I got the recipe from the Blackbird Bakery blog but they took down all of their amazing recipes. I am super thankful that I wrote that one in my journal. All the other one's I Pintrested are gone. It was a good reminder that things on the internet can disappear. Always write down the important stuff!!
