I'm not real sure as am I not vegan.... but I was in H.S. I'd just load it up with veggies.
This might be what I'd put on it: Mustard, lettuce, tomato, onion,peppers, cucumbes or pickles, long/thin sliced carrots, avacado, salt and pepper... and maybe some tofu |

all of the above. I *adore* sandwiches with soy mayo and tons of fresh veggies, including avocado, or else ones with tons of grilled veggies like eggplant, caramelized onions, peppers, etc. MMMMM.

Yep, and other nut-butter combos, like nut-butter and bananas or nut-butter and homemade nutella
One of my faves from The Vegan Table is a sandwich with vegan "cream cheese" and cucumber (and herbs.) Another option are vegan veggie burgers, bean burgers, or even things like vegan falafel or vegan beanballs (like meatballs - there is a good recipe in Veganomicon.) I'm making myself hungry, LOL.

pesto is good on sandwiches too.
i love portobello with avocado, red onion, lettuce, tomato, italian seasoning and olive oil on ciabatta ( I like some provolone on mine though ). |

I love sandwiches w/ just veggies and possibly mustard. IMHO, a sub w/ just veggies is way better than a meat sub (and I don't miss the cheese, either)

my mouth is watering now! My favorite summer sandwiches are grilled zucchini, summer squash and eggplant with chard, mushrooms, fennel bulb, fresh basil leaves and avocado. Not vegan, but I also love some goat cheese on that, too!
