I only season my beans with salt, but I always add yummy salsas, pickled peppers, cilantro, lime juice, etc, to the final product. So it ends up getting its flavor from there.

I actually just used canned beans. There are 5 different kinds in our pantry. Much faster that way!

I add salt as the beans start to soften, but SIL adds it right away.
For 2 cups of dried beans, I put 2 heads (not cloves) of garlic, one onion and half a bell pepper in the blender with water and cook the beans in that. Any kind, but I prefer black beans. Salt as it starts to soften, not sure how much... left over water can be used to cook rice, but I don't leave much, just enough to puree the beans and then I cook the water out.

Linda, how do you use your pureed black beans? They sound delicious, but I wouldn't know what to do with them except use them as an alternative to refried beans.

They pretty much ARE refried beans, except that I don't use much oil. Just a little, for flavor and because it helps preserve them. I just eat them with dinner because Salvadoran Culture. I would use Salvadoran red beans (frijol de seda) if they were not over $2/lb. Black beans are often less than $1/lb and pintos are too mushy for my taste, although I do sometimes make them, because cheap.

I don't cook with beans outside of chili and, if I'm being honest, that's dh's specialty so yeah - I don't cook with beans. But I'd like to try, so following along.

We usually add about 4 slices worth of chopped bacon, a good T of minced garlic, a diced white onion, some powdered chipotle pepper, a T of maple syrup, and toward the end plenty of salt and chopped cilantro.

I have done both, but I prefer raw because then all the fat stays in the beans and add more flavor.

I season 2 lbs pinto beans with about 4-6 tbs chili powder, 1-2 tbs cumin, and lots of salt and pepper. I don't really measure anything.
I like to fry a pound of bacon, then cook an onion and a bell pepper in the grease, and dump the grease and cooked veggies all in the bean pot. And add the crumbled, cooked bacon. Adding everything raw works too, but I prefer cooking it all first. I think it gives it a different flavor.

Every time I make beans I now come back to this thread for ideas of different seasonings and I'm never disappointed.
This time was 2.5 cups dried black beans, 1 head of garlic, 1 onion, 1/2 of a red bell pepper, all finely diced. A bunch of bay leaves and some cumin. Salt at the end. My house smelled amazing while it was cooking. I took a bit less than half and made chili tonight, and now all I have to do is make rice and tomorrow's dinner is finished! |

My go to is a little bloop of liquid smoke and a little bloop of worstechire sauce and I know I didn't spell that right and my tablet doesn't have spell check so neener . Along with salt, garlic, chili powder maybe sometimes, amd I usually fry up an onion chopped up small real soft and throw that in there too.

I'm really curious about this . . . how do y'all *eat* your beans?
It sounds as though everyone here cooks beans in the seasoning . . . are these beans eaten as a side dish in a small bowl with the cooking liquid? I grew up vegetarian (still am!) and I cook beans the very lazy way just like my mom -- rinse beans, dump in pressure cooker, add water, lock lid, cook for 35-40 mins. Drain & add to recipe. If making refried-type beans (look away authentic cooks ), I cook & drain beans, toss in the food processor with spices & blend. I've never cooked beans in seasoning, nor have I ever eaten cooked beans in their liquid (Mexican restaurants being the exception.) I am intrigued. So tell me how y'all eat your beans.
