Proud of myself tonight and needed a place to brag, hope y'all don't mind. I made veggie lasagna: homemade noodles, homemade sauce, diced zucchini and eggplant instead of meat, LOTS of cheese. I'm so excited for it to come out of the oven! I wish I had some garlic bread to go with it.
ETA: So... the kids wouldn't touch it. I think it was the eggplant. DH and I agreed though: it was my best lasagna yet. I made a TON because the kids normally like lasagna (we usually have a meat one), so I think I'm going to freeze it in portions for the two of us later. Tonight I grilled up our first eggplant of the season & made some pasta to go with it. The only thing that would have made it better is having some shaved parmesan to go with it.

Homemade personal pizza. I used "real"flour for the first time in a long time. It was so nice to work with.
Dh & ds3 are GF so I almost never use wheat flour.

Ok I have been so stuck on ideas.
Monday w2as oven 'fried' eggplant rounds with it was suposed to be polenta but baby was distracting me and so every thing wazs ready but that so i cooked some gf pasta (one with ameranth it was really quite good, and cooked in 8 min total rather then the 20 polenta would hyave taken) and salid. Last night dh and I went out before the church busness meeting (it is kinda sad that it is ou7r one reliable night out a year) the girls and my mom ate the rest of the eggplant. My girls love it my dh hates it but will eat it.

The plum tomatoes are the ones that are ripe. I do have one great big heirloom tomato that is almost ripe and it has already been earmarked for BLT's hopefully this week.
