How do you season your beans?
When I make beans and rice, the beans are always so bland. I add salt and seasonings while the dried beans cook, but how much salt do you actually have to use to add flavor? I also add chili powder, garlic powder, and pepper to the water, about 1/2 t each. Bland, bland, bland. Do you season them after they cook? This is so basic, I'm sure, but I need help!

I like plain Jasmine rice with a can of plain ole black beans on top. Yummmmm. On that (after it's cooked) I put salt, paprika and Sarachi hot sauce.
Years ago I put Sazon packets - found in the Spanish isle.

How many cups of beans? That doesn't sound like very much seasoning.
I'd use 2-3 times that amount if I was starting with a cup dried. Put all the seasoning in but salt at the beginning. Salt goes in when there are just a couple minutes left of cooking. |

Yes, don't be shy. Use lots more salt. Cumin is really nice with rice and beans. I don't like things too spicy though. A little chili powder goes a long way.

Ok, so it was two pounds of dry pinto beans in a pot of water. That's a lot of beans.
I knew not to add salt while they're soaking, only when they're cooking, but I didn't know to wait til the last minute to add salt. Maybe a whole T. of salt in the water? Cumin sounds good.

I have this trouble, too, and I'm not shy about seasoning my food. I quit making beans for that very reason because I just can't seem to get them flavorful enough. Following along because I'd love to make beans again.

Tossing in a few bay leaves and pepper corns might also help. I do this with chickpeas to add flavour.

For two pounds of beans? I'd be adding more than one tablespoon salt. When I made beans last night I had over a tablespoon for with what started as just a cup and a half of dried beans (less than a pound). My post had a lot of excess water, so some of how much I salt depends on that (how much salt am I losing to liquid ).
For two pounds of beans - I'd be adding 2 teaspoons each of any aromatics and then a couple tablespoons of salt. It is like potatoes, or pasta, the starch really needs good salting. |

yep soak first, then rinse, then i do mine in the crockpot, but i some of the seasoning in the beginning, and then do a second add in a little before serving. (like after they are done cooking, but 5-10 minutes before eating) i don't measure but i usually do 1-2cs dry beans, and add in several TBS of seasonins (garlic, onion, a little salt (most salt i add at the end so the beans cook better), sometimes grated lime peel, cumin, whatever seasonings will go with the type of meal i am cooking.) i do like to add the second round of seasonings a bit before serving to "freshin" it up a bit so to speak or pop the flavors back out.

Thyme, salt, pepper. I stink at making more than a miniscule amount, though. Too much water, not enough flavor.

I sometimes add some jarred broth concentrate, as well. I get the unchicken flavor.
