Default What to do with stew meat besides stew?

Not feeling like beef stew since we had it recently. Any other suggestions?

Our favorites:

Stew Beef a la Stroganoff
Combine 1/2 cup flour, 2 tsp. salt, dash pepper, & 1 tsp. dry mustard in paper sack. Put in 3 lb. stew beef in small batches & shake until well coated. (This recipe makes dinner for 2 days for 5 people!) Put in slow cooker. Add 2 med. onions, slivered, 1/2 lb. drained canned mushrooms, & 2 cups beef broth. Crock all day on Low. Stir in 1 1/2 cups sour cream or plain yogurt & 1/4 cup flour just before serving. Serve over rice or egg noodles. You can also reduce the amount of beef and put in unpeeled quartered potatoes. You can use all whole wheat flour.

Slow-Cooked Beef with Bok Choy
Brown up to 2 lb cut up beef in canola oil or other very mild-tasting oil. Put into slow cooker with slivered onion, smashed garlic, powdered ginger, soy sauce, & 1 head bok choy, stems only (use greens in another recipe), cut into chunks. Add 1 1/2 cups beef broth. Crock all day on Low. 1 hour before serving, stir or shake up 1/2 cup cold water w/1 1/2 tbsp. cornstarch, pour in, and turn on High. Serve w/rice.

Beef Curry ("Mussulman" Curry) with Vegetarian Variation
You will need a Dutch oven or similar pot in lighter material. First put in 1 tbsp. mustard seeds and stir them around a bit on Medium until they start to pop. Pour them out onto a plate. Heat 1 tbsp. canola oil or other very mild-tasting oil in the same pot. Put in 2 chopped onions, 1/2 tsp. salt, & 1/2 tsp. sugar, stir well, then add your beef. (You can use the last bits of an irregular package of freshly ground beef for this, or a whole pound of ground beef or stew meat, or leave the meat out entirely and use the max amount of vegetables.) Saute until onions are golden brown. Put in the mustard seeds, 3 smashed garlic cloves, 1 tbsp. minced fresh ginger or 1 tsp. dried, 1 1/2 tbsp. ground coriander, & 1 tbsp. curry powder of choice. Stir until fragrant. Now add up to 1 lb. peeled cubed potatoes, 1 head cauliflower cut up (leave out if using 1 lb. meat), & 2 cups carrot coins. Pour in 2 cups water, put on the lid, & simmer until tender & thickened, checking every 15 minutes or so. Taste & adjust seasoning w/salt & black pepper. Serve w/rice & plain yogurt, or make a raita.

Right now stewing beef is the cheapest beef I can find. Beef is so expensive!

How do you make it so the meat isn't tough? I've used it as a stir fry and it wasn't very tender.

If you have time for the slowcooker...we like to slowcook bbq sauce and stew meat. Then you can serve over potatoes (add cheese/sour cream/other toppings if desired).

This recipe makes even tough cuts of meat tender. I haven't tried it with stew meat yet, tho I have with other tough cuts. I have a couple packages of stew meat in the freezer tho and this is how I intend to cook it.

The crockpot mongolian beef from Whoneedsacape.com is very good.
It is a family favorite.

Also, I have for almost our entire marraige, I have made a recipe that reminds us of the wonderful beef we ate in South America, although I am sure it is nothing like how they make it there, LOL. To the crock pot, put 1/4 cup of soy sauce and 1/4 cup brown sugar, add enough picante sauce that it will cover the meat, then stir it all up. Add some frozen corn. Serve with rice.

I have not, but hoisin sauce is sweetish anyway. I bet you could easily reduce the sugar by half and it would be fine. I have used coconut sugar and it has been fine. The sauce does not come out as thick as in the photo, so plan to thicken it a bit.

When I put it in beef stew,I've learned that you need to cook it for a while for it to be tender.

I got rid of my crockpot,so those recipes are out.

You can still cook it on low over the stove in a heavy pot or dutch oven. You might just need to check it more often.

Oh, sorry. I usually put everything on low for 6-8 hours. I am not really precise about it. I did not have a recipe or anything, I just made it up one day when I was first learning to cook after we were married, and it is always fine. Not gourmet or blogworthy, but it is a quick and easy meal, and kind of different.
