Just keeping track of what I end up making each week so I can come back and remember myself!
This week: Pot Roast (went to Costco and got a double pack of chuck roast) with carrots and onions Roasted garlic potatoes Apple crisp Costco-size container of blueberries Large bottle of mango lhassi yogurt drink (for a 2 pack at Costco again, one for us and one for this family) Hoping she likes it... all is gluten free except for apple crisp (I had a mix from Aldi I wanted to use up for crisp— also she said they loved banana bread I made last week and that wasn’t gluten free) Also, usually I’d add a salad to that for greens but what I have was a ceased salad mix with romaine, and I had to toss it bc of salmonella scare)

For the meatloaf idea, since they're just limiting gluten, not allergic, I'd still make it with traditional oats. Oats are NOT gluten, however, oats are almost always cross contaminated with gluten therefore they are off limits (unless specifically labelled gluten free) for those with allergies.
I would add a soup for sure for one of the meals a month. You could easily rotate a variety and they're easy. Chicken veggie. Tortilla. Chili. Meatball. Etc. A variety of saucy meat and veggie dishes served over rice. We do a lot of things like that. Chicken teriyaki is a fave. Tacos are another easy one. Just go with corn shells instead of flour for no gluten. You can get the hard or soft corn shells -- whatever they prefer. I LOVE the idea that you brought along some fruit on the side. Fruit is a life saver when you're exhausted but still need to feed littles. Especially those cuties -- easy for kids to get themselves. Any berries, grapes, apples, etc. are fantastic too!

I totally agree with the fruit. We recently had someone from church bring food after Dh spent two nights in the hospital and the precut fruit she included was super helpful.

This week I am going to do this coconut chicken one pot casserole thing:

Or maybe I’ll just do roasted green beans as I don’t know if salad really “goes” with that. Then lemon squares and sliced Granny Smith apples (she said her toddlers love those).

I decided to do a spinach salad with apple slices and sliced almonds (raspberry vinaigrette dressing).
Also, I made the Coconut chicken rice dish tonight for my family to see how it turned out, and it was DELISH. I will definitely make it again.
