sweet potato, squash, & apple soup
i'm gettting over a pregnancy induced aversion to fruits and vegetables. my midwife suggested that for the veggies, i should try making more soup! this one i made last night and it was soooo yummy! even my family of picky eaters gobbled it up! served with a crispy french baguette
this soup is perfect for those fall days when the sun sets alittle earlier than the day before. the squash and apply complement one another quite nicely in this soup. sweet potatoes and yams are loaded with vitamins A and C and potassium. ingredients: 1 medium onion, chopped 1 TBSP olive oil 2 cups vegetable stock 2 cups butternut squash, peeled and diced 2 cups sweet potatoes or yams, peeled and diced 2-3 medium apples, cored and diced 1/2 tsp salt 1/2 tsp pepper 1/2 tsp nutmeg 1/2 tsp cayenne pepper (optional) In a large soup pot, saute the onions in oil on medium high heat until translucent. Add the stock, squash, potatos, apples, and salt, pepper, and cayenne and bring to a boil. Turn down the heat and simmer for 30 minutes. Take 2 ladles worth of vegetables and 1 ladle of stock and blend in blender or food processor until smooth. Return to soup pot and stir together before serving. Makes 4-6 servings |

I totally do not get this recipie. Help!

Where is the stock she is talking about??? According to this: "In a large soup pot, saute the onions in oil on medium high heat until translucent. Add the stock, squash, potatos, apples, and salt, pepper, and cayenne and bring to a boil." You have already added it! Can someone explain this to me??

I think it mean to take 2 ladles of just vegetable and 1 ladle of just stock out of the pot and put them in the blender.

I'm making something similar for dinner tonight. I thought I had sweet potatoes, but I don't, so I'm skipping them. Mine also has some cream added.
