Best Beef/Meat for Shredding?
I have been doing various freezer meals with pot roast. Sometimes it shreds and sometimes it doesn't Is there a particular kind of roast that is good for shredding?

Chicken shreds great for me... even better after going into the slow cooker to make broth... anything shreds after the slow cooker.

When mine doesn't shred either the meat is too fatty or it hasn't been cooked long enough. Chuck roasts are sometimes too fatty to shred.

Sorry, thought the "meat" bit meant others too.
My beef I do for stew in the slow cooker falls apart. I think roasting often dries meat so you need to cook it in a way that retains moisture if you want it to break apart. Sent from my EVA-L09 using Tapatalk |

I can usually get anything to shred. Most likely you need to cook longer. I usually cook at a lower temp
For 4-5 hours. |

Yep, lower, longer and with more moisture added.
I sometimes have the results you have -- where it's just not shredding... In that case, I cut it up, throw it back in the juices/broth and let it go longer. I have found the slow cooker to be the best method for shredded meat.

I like to use a rump roast or round roast for shredding. They are a little leaner than the chuck roast.

I don't think the "high" setting on my crockpot works. But the "low" setting is pretty hot. I always cook it for at least 5 hours. I actually have it in my mini crock today on low.
These are all freezer meals so I should start writing what kind of beef it is. I just buy whatever is on sale. Sent from my iPhone using Tapatalk

Just a random factoid I picked up - I read a Cook's Illustrated article several years ago about crock pots. Their testing showed that the difference between low and high settings wasn't the actual cooking temperature but rather how long it took the unit to get to it's final cooking temperature. The low setting took longer to get there, but it was pretty much the same temp as the high setting once it settled into cooking. That seemed to hold true for pretty much every unit they tested.
Honestly, I'd use fattier cuts if the goal is to shred it. All that fat will break down and provide moisture if given enough time. And according to the TV chefs my kids like to quote, "Fat is flavor."

I'm not hugely up on my cuts of beef. I've read that top round doesn't shred very well and bottom round shreds but into smaller pieces like ground beef. I'm not familiar at all with the other cut but through a cursory google search, that cut seems like it is usually sliced like for sandwiches.
On the other hand, it doesn't seem to matter what cut of roast I buy at the store, if I put it in my crockpot with beef broth and cook it on low all day, it seems like anything shreds.
