Wow, it's a new month and a new year!

What are you eating this month for your main meal each day?

Last night we had lemon, artichoke and caper chicken breasts, mashed potatoes, green beans and arugula salad with lemon dill vinaigrette.

Tonight we are planning to have honey garlic shrimp, basmati rice, broccoli, and fresh pineapple.

Last night we had carnitas. It's a great meal to feed a crowd, and/or a lot of work once and then a freezer full. Almost all the components (shredded pork, tomatillo salsa, black beans) are things I make in huge batches and then freeze to pull out throughout the year.

Tonight is zucchini lasagna at DH's birthday request. Thankfully I have that in the freezer too--the sauce + sliced zucchini strips--so it will come together with minimal effort.

I slice them with my mandolin like I would to use them immediately, then I spread them out in a single layer on a cookie sheet lined with a Silpat. I made dairy-free stroganoff the other night, and it was so good. It has been years since I made it since you need sour cream to make it stroganoff, but this recipe called for plain vegan (coconut) yogurt. Served over rice with peas.

TOnight we had roasted chicken quarters, steamed green beans, roasted broccoli, sauteed zucchini noodles, and baked potato.

We did that when dd had to be dairy free. Turned out really well.

I didn't menu plan this week but was at the store, so I picked up some things I could do from memory. Tonight is Southwestern Chicken Soup (chicken broth, salsa verde, garlic, black beans, shredded chicken) with cheese, chips and sliced avocado.

Last night was Orecchiette Pasta with Chicken Sausage and Broccoli, caesar salad and breadsticks.

oh man, stroganoff sounds so good. I haven't made it in probably years. What kind of beef cuts do y'all use?

I think we might do salmon melts tonight, with roasted brussels sprouts. I need to make some bread though. Ugh.

I think the last time I did it I went real simple and did it with ground beef.
