We had basil pesto butter salmon (pre prepared from Costco), frozen Brazilian cheese bites (also from Costco), and steamed garlic broccoli last night. For some reason it was a killer good combination and everyone from 10 months old to 42 years old ate it.

Tonight, roasted Brussels sprouts and squash, and lemon garlic flank steak which I plan to marinate for a few hours and then bake because we don't have a grill. Not sure how that will work but I did read you can bake flanks steak in a 350 degree oven for 50-60 minutes. Marinade recipe also calls for reserving marinade to dunk meat in again after it's cooked which seems like a good idea.

IDK, ground beef just sounds wrong I think that's why I haven't made it in years - I had done it back when we were in a beef CSA and getting cuts that worked well for it.

What cuts did you use then that you really liked in the stroganoff?

Served over rice for kids, zucchini noodles for dh and I. Steamed carrots and spinach salad on the side.

Have you tried tinypic? They have odd pop ups, but I've had success there recently.

Pork chops with rosemary and lemon are baking, buttery rice and kale on the side. I'm terrible at pork chops but these were on a great sale, so I hope I don't ruin them. (Eta: they were overdone and dry, boo. My meat thermometer needs to be thrown out. I did add steamed apple slices to the menu.)

The last time I made stroganoff was yeeeeeeeeeaaars ago, but I think I used sirloin tips.

I had a top round roast I forgot to get into the crockpot, so I par-froze it in order to slice it super thin and made Philly cheesesteaks out of it. Rib-eye would probably have been better, but you use what you have, right? We had sweet potato oven fries and steamed broccoli to go with it.

I have terrible luck with pork chops too! I haven't made them in years because they are always dry and tough.

I love biscuits and gravy! It was one of my mom's special breakfasts - my brother's friends would come over in droves when she made it in the summer. Try as I might, my kids just will.not.eat.it! (Party poopers!) They'll slather the biscuits with copious amounts of jam, though.

I opened up the new SkinnyTaste Fast and Slow I got from the library, and there's a recipe for Slow Cooker Hamburger Stroganoff! Permission. Lots of other yummy looking recipes in there, too.

Tonight my parents came over for dinner. They usually come once a week or so. We had tacos, spanish rice in the IP, guac and chips, and salad. So much happiness over delicious food.

I don't know her blog well enough to know. I'll share when I make some. Trying a basic taco recipe from it tomorrow...just picked it at random as I was leaving to do a little shopping because it's easy.

Tonight I served tortilla chicken soup I bought at Costco. It was very good. I had to stretch it with rice and chicken broth, but it worked because it was spicy to begin with and still ended up with nice flavor. Rolls to go with.
